Zesty Salmon Burgers with Pickled Cucumber and Avocado Mash

Zesty Salmon Burgers with Pickled Cucumber and Avocado

A fresher twist on the classic hamburger, this salmon burger’s a great alternative for for red meat on your BBQ. Paired with pickled cucumber and arugula for some zing and crisp and balanced with cool and creamy avocado mash. Finished off with a brioche bun and wasabi mayo, this burger is sure to crowd please!

Ingredients

Salmon Patty
Toppings
Pickled Onion & Cucumber

Instructions

Pickled Cucumber
  1. Wash all produce
  2. Slice cucumber into thin rounds and red onion into thin slices (julienned)
  3. Chop scallions into thin slices, separating the whites from greens
  4. In a mixing bowl, toss cucumbers with salt, vinegar, water, sugar, and scallion greens
  5. Let soak for 10-15 minutes
Salmon Patties
  1. Preheat pan or griddle on stove to medium high heat
  2. Drain salmon if canned. Pat salmon dry with a paper towel and throw into a mixing bowl. If using fresh salmon, I recommend using a food processor to grind up the raw salmon.
  3. Toss scallions whites slices up from earlier into bowl. Mince jalapeno, discarding seeds, and throw into bowl
  4. Season contents of mixing bowl with smoked paprika, salt, & pepper to taste
  5. Form mixture into 2 salmon patties. Rule of thumb is to make them slightly bigger than the buns to account for shrinkage when cooking
  6. Cook patties on pan or griddle for 3-4 minutes each side until nicely browned on each side
Assembly
  1. Toast buns in toaster oven or on the same pan/griddle used for the patties per preference
  2. Cut open avocado and in a small bowl, season with salt & pepper and mash to desired consistency. Spread mashed avocado across the top bun
  3. Mix mayo and wasabi together and spread over bottom bun
  4. Place salmon patty on bottom bun, top with pickled cucumber, arugula and top bun with avocado spread
  5. Enjoy!

Notes

If you’re having difficulty forming mixture into patties due to excess moisture, try mixing ½ cup breadcrumbs, almond flour, or ground oats until formed
