2020 Purple Carrot Favorite Recipes - Plant Based Meal Delivery Service

I’ve been subscribed to meal delivery services for a little over a year now, and it's been a real game changer in my weekly routine and meal prep. I talk about the reasons for choosing a meal delivery service over traditional meal planning/grocery shopping in depth in this article.
After trying out several different options over the past year, I’ve been really happy with my latest meal delivery service: Purple Carrot. Although I’m not vegan personally, I really enjoy the variety of flavors, ingredients and cuisines they have to offer. Miso Coconut Ramen Bowls with Charred Broccolini & Smoked Nori
Purple Carrot created a very savory, belly warming version of one of my favorite foods. Their take on this Japanese staple is a creamy, buttery, miso broth with fresh slurpable ramen noodles. This balanced well with the crunch of broccolini & radish and kick from the chili sauce
Beet & Coconut Bacon Flatbreads with Herbed Cashew Cheese
They had me fooled with the vegan cheese in this flatbread because it literally tasted like herbed cream cheese. The roasted beets had a subtle sweetness to it that I can really go for. The coconut bacon is probably the most creative thing I’ve seen from Purple Carrot so far; they used a tamarind sauce, liquid smoke, and a bit of turbinado sugar to mimic the umami of apple smoked bacon.
Crispy Cauliflower Pakoras with Red Lentil Dal & Cilantro Chutney
The cauliflower in this recipe turned out soooo good with the spice in this batter. That paired with the dal made this dish so satisfying. Finished off with the cilantro chutney to add a little acidity, this is def something I’d make again.
Caribbean Sweet Potatoes with Coconut Rice & Mango Salsa
This is the one recipe on my list that Mario actually made. Again, the ingredients are so simple, but how they’re seasoned and prepared makes it so delicious and fun to eat. The coconut rice was very mild and simple, while all the flavor came from the spices in the sweet potato and the brightness of the mango salsa.
Tamarind Cauliflower with Gingered Fried Rice & Cashews
Here’s another cauliflower recipe for you, but compared to the pakoras, it has more of an Eastern Asian vibe. I love the amount of flavor packed in this dish, especially in the tamarind sauce for the cauliflower. This recipe also has a lot of variety in vegetables from the green beans, cauliflower, and tomatoes which I can’t get enough of!
Minted Spinach Soup with Ras El Hanout Carrots & Yogurt
I love me a good heart warming soup, and Purple Carrot delivered with this recipe. I usually don’t eat soups as my main entree, but with all the protein and complex starches from the chickpeas and carrots, Mario and I ended up having a little bit left over! Also, I’m a huge fan of food and drinks with mint, so it was hard not to like this recipe.
