🌸A Dietitian’s Spring Produce Guide: What’s In Season (+ My Faves!)

Spring is one of my favorite times to boost my meals with ingredients that are naturally in season. Whether you’re craving something crisp and green or sweet and juicy, there’s so much variety to enjoy right now.

Below is a roundup of what’s typically in season during spring—with ⭐ next to my personal favorites that I reach for the most in my own kitchen.

🥬 Veggies

There’s no shortage of delicious greens and tender spring veggies this time of year. These are perfect for roasting, sautéing, or tossing into grain bowls and salads.

🌱 A Few Ways I Love Using Spring Produce:

  • Making pajeon (Korean savory pancakes) with chives, green onions, and carrots

  • Braising baby potatoes in a soy sauce blend for a simple gamja jorim—a sweet-savory Korean side dish

  • Tossing arugula and citrus segments into a simple salad with olive oil and flaky salt

  • Throwing together a poquito-style veggie hash with peas, potatoes, chorizo, and fridge leftovers—great with a fried egg or wrapped in a tortilla

  • Blending strawberries into smoothies, a fun twist on iced matcha or serving them with yogurt + honey

  • Using fresh cilantro in homemade pico de gallo for tacos, bowls, or grilled meats

  • Roasting asparagus with lemon and parsley, served alongside salmon and roasted baby potatoes

  • Making ssam-style lettuce wraps with tender meat, rice, spring onions, and a drizzle of gochujang sauce

  • Adding pineapple and mint to agua fresca or a refreshing ensalada de frutas

  • Mashing avocados with lime and cilantro for guac, or spreading on toast with seasonal herbs

Seasonal eating doesn’t have to be fancy—just start with what’s in season and build from there! It can be a fun way to reconnect with food and tune into your body’s needs. ✨
